Iron has an essential role in the formation of hemoglobin and myoglobin. Its main role is the transport of oxygen to the tissues. In addition, it participates in the metabolism of catecholamines and the synthesis of DNA.
Only a very small fraction of dietary iron is absorbed: between 10-15% for non-heme iron (cereals, fruits, vegetables) and between 20-30% for heme iron (meat, fish).
